Buche Affinee

La Buche Affinee  is a semi soft Table and Cooking Cheese, made with local Culture it is hand rolled and is allowed to dry for one day before it is sprayed with PC Moulds and placed in the Maturation room for at least 3 weeks, although the shape is always the same the thickness can vary, it usually weighs between 250 and 400 gr per Buche. It is very nice and tasty on a cheese Platter but can also be used warm on toasts in the goat cheese salad or sliced onto a pizza or crumbled into a Wrap.
